Recipe: Baked Rigatoni

This is my go-to recipe when I need to bring a meal to someone.  It works well for this purpose because you put it all together at home, it’s all pre-cooked, and the family receiving the meal just needs to pop it in the oven for 20 minutes before serving.

I just happen to be dropping off a meal tonight for a friend, so I made this meal a few minutes ago. 

Baked Rigatoni

Ingredients

1 box of rigatoni noodles

1 jar of red pasta sauce

1 pound of sausage (not links)

1 large can of diced tomatoes

2 packages of sliced cheese (I use mozzarella)

 

                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                                               Cook Cook the rigatoni noodles in a large pot.  Simultaneously brown the sausage.

When pasta is cooked, drain.  Set aside for a minute. 

 Remove sausage from heat when brown, drain.  Add pasta sauce and tomatoes.

When meat and sauces are mixed together, add to pasta. Combine.

Next, spoon mixture into pans, but only fill half way.  Take cheese slices and layer at this point. (I use disposable pans when I am bringing a meal.  This recipe usually makes enough for the family we are bringing to and ours!)

Next, spoon another layer of pasta/meat sauce over the cheese.  Top with a final layer of cheese.

This is the final product!  I then cover with foil and write the directions on top with a sharpie:

Bake at 450 degrees for 20 minutes or until cheese is brown.  Enjoy!

Recipe : No Knife-Pasta from Martha Stewart

This is a recipet I posted a couple of years ago, but wanted to share it again since it is such a light summer dish:

No Knife-Pasta from Martha Stewart 



* 1 pound pasta
* Coarse salt and freshly ground pepper
* 4 medium tomatoes, cored and torn into 3/4th inch pieces (I cheat
   and buy diced tomatoes in a can!)
* 1/2 cup coarsely torn basil leaves, plus more for garnish
* 1/2 up extra-virgin olive oil
* 3T coarsely torn oregano leaves
* 4 medium cloves garlic, smashed
* 1/2 t. crushed red pepper flakes
* 1/4 # fresh mozzarella, torn into 1/2 inch pieces

1. Bring a large pot of salted water to a boil. Add pasta and cook until al dente, according to package directions.


2. While pasta is cooking , in a large bowl, combine tomatoes, basil,
olive oil, oregano, garlic, and red-pepper flakes; season with salt and pepper. Let stand at room temperature up to 8 hours.


3. Drain spaghetti in a colander and add tomato to mixture. Add
mozzarella and toss to combine. Garnish with basil and serve
immediately.
